In our neck of the woods Tex-Mex is referred to as Mexican food, we’re already in Texas. We know the differences and subtleties associated with the two cuisines, it’s more than just flour vs corn tortillas. Corn can overpower taco ingredients while flour allows the fillings to shine through, wrapped in a soft flour blanket. Both are a must for combo plates and act as a “pusher”, (a rolled up tortilla, corn or flour, which serves as an additional utensil). Gotta love Tex-Mex! read article here
