These recipes are for folks who already know their way around a kitchen. We’re not here to hold your spatula or explain what “simmer” means — if you’ve ever browned ground beef without setting off the smoke alarm, you’ll be fine. We give you the game plan; you bring the know-how, the taste buds, and maybe a fire extinguisher… just in case.
Those of you San Antonians who remember Centeno Markets back in the day may appreciate this story. The grandson of the markets founder, Josef Centeno, has landed in LA and taken their downtown by storm, with Baco Mercat, which is not Tex-Mex, (but Bar Amá is) and earned the chef a Michelin star. Lets hope shines a light on our humble style of Tex-Mex there in LA soon. I am lucky enough to live in San Antonio and have ready access to the original, humble, south Texas style. People the world over are being turned on to our food and I hope these folks have the same opportunity to taste and enjoy the original, before being fed “new” Tex-Mex, which is sure to come; maybe not from Centeno, but many chefs are trying just that.
